The back storyHudson Valley Vinegar began in 2014 in the tasting room of New York’s first farm distillery, Harvest Spirits, when third generation apple farmer and craft distiller Derek Grout set out to create traditional method balsamic vinegar from his family’s homegrown apples. His curiosity lead to a deep dive into the kinetics of fermenting, acetifying and aging apple cider vinegar. After years of perfecting and aging in oak barrels, our balsamic apple cider vinegar is now beloved by local folks here in the Hudson Valley. Another way to eat an apple a day.
